Frozen Cherries Blue Berries and Cherries Healthy Desserts

Cobblers are one of the easiest no-fuss desserts to put together and they taste so good! Serve this cherry cobbler warm with huge dollops of vanilla ice cream for the perfect summer dessert.

Sometimes berries are like the bananas of the banana bread world. When they go bad, which can be quickly you want to use them up or risk tossing them in the trash and that's a waste! I usually try and throw them in a zip lock bag and freeze them for summer smoothies, but don't forget about making cobbler dessert. It's perfect because it takes a whole lot of berries and along with some simple pantry staple ingredients for the cobbler part.

This summer berry and cherry cobbler uses a mixture of cherries, raspberries, blueberries and strawberries, and a touch of cornstarch and sugar to thicken and sweeten. The cobbler top hs a crunchy surface but is soft underneath where it sits on top of the berries. Ice cream is a given with any type of cobbler. Once it begins to melt with the heat of the cobbler, it forms that yummy creamy sauce that every cobbler is famous for!

  • Berries- A mixture is fine as long as you stick to the initial quantity needed for the recipe, also this recipe calls for frozen berries.

  • Cornstarch- It's a thickener used in all sorts of cooking to thicken soups and sauces and in this case, the berry mixture for our cobbler.
  • Sugar- Regular granulated sugar is perfect.
  • Flour- All purpose.
  • Baking Powder.
  • Butter- unsalted.
  • Sour Cream- plain yogurt can be substituted also.
  • Whole milk.
  • Large egg.

  1. Making the filling

    Add the berries and cherries to a 9×13 inch baking pan. Sprinkle the sugar and cornstarch over the fruit and mix through with your hands or a spatula. Make sure the fruit is well coated.

  2. Baking the cobbler

    Bake the cobbler for around 40-45 minutes and you can see the topping begin to turn golden in color. Let cool for 5 minutes before serving in bowls with your favorite vanilla ice cream.

Do my berries need to be frozen?

No they do not, but final bake the may be slightly quicker than when using frozen berries.

Can I make my cobbler ahead of time?

Yes, just store it in the fridge until you need it (up to two days) and then reheat in a. 350 degrees oven for about 15 minutes.

Can I use pie canned filling for the cobbler filling?

I don't recommend it because of the added sugar It already has amongst other ingredients.

Can I halve this recipe?

You can, I would recommend using a 9×9 or even an 8×8 baking pan and adjusting the time slightly.

Is cherry cobbler crunchy?

The surface of the cobbler is slightly crunchy but with a soft cake-like texture on the inside. It's delicious served warm.

  • 4 cups pitted cherries
  • 4 cups frozen mixed berries
  • 1/2 cup sugar
  • 3 tbsp cornstarch
  • 2 tsp vanilla extract

For the topping

  • 1 1/3 cups all purpose flour
  • 1/4 cup sugar
  • 1 1/2 tsp baking powder
  • 4 tbsp cold butter cut into small cubes
  • 1/3 cup milk
  • 1/3 cup sour cream
  • 1 egg
  • 1 tsp vanilla extract
  • Preheat the oven to 400 degrees F.

  • In a 9×13 inch baking pan add the cherries, mixed berries, sugar, cornstarch and vanilla.

  • Mix well until the fruit has been coated with the sugar and cornstarch.

  • In a bowl combine the flour, sugar and baking powder.

  • Add the butter and rub it in to the flour with your fingers.

  • Make a well in the flour and add the milk, sour cream, egg and vanilla.

  • Mix the liquids into the flour until a sticky dough forms.

  • Using a spoon, scoop up some of the batter and randomly drop it onto the fruit covering most of the cobbler.

  • Sprinkle the remaining tablespoon of sugar over the cobbler and place in the oven.

  • Bake for around 40-45 minutes and the top begins to turn golden brown.

  • Serve wrm with anilla ice cream
